大阪の箱寿司・大阪寿司の老舗「たこ竹」の店舗デザイン・店舗設計を担当した。
天保2年(1831年)創業の大阪寿司の老舗「たこ竹」が、ベーカリーショップ跡地へ移転するための居抜き改修プロジェクトである。
テイクアウトを中心としながら、店内で大阪寿司を楽しむこともできる専門店として計画した。既存の洋の空間を活かしつつ、改修コストを抑えながら、老舗の歴史と品格を感じられる和の空間へと転換することが今回の大きなテーマである。
檜材の格子戸、竹、銅板、左官仕上げといった和の素材を取り入れながら、レセプションカウンター上には洋のペンダント照明を組み合わせた。伝統的な要素をそのまま再現するのではなく、異なる要素を重ねることで、老舗らしさの中に現代的な感覚を持たせた。
厨房には開口部を設け、ちらし寿司、箱寿司、棒寿司を仕上げる職人の流麗な手さばきが客席から感じられる構成とした。料理が生まれる所作そのものを、店の体験の一部として取り込んでいる。
長い歴史を受け継ぐ大阪寿司の伝統と、現代の店舗としての軽やかさを共存させ、シンプルで上質なモダン和空間へと再構成した。

This renovation project involved the relocation of Takotake, a long-established Osaka-style pressed sushi restaurant founded in 1831, into a former bakery space.
The restaurant was planned primarily as a takeout shop, while also providing a small eat-in experience for guests. The key challenge was to convert the existing Western-style interior into a Japanese-inspired space while keeping renovation costs under control.
Traditional materials such as hinoki wood lattice doors, bamboo, copper panels, and plaster finishes were introduced throughout the interior. At the same time, Western-style pendant lighting was placed above the reception counter, creating a deliberate contrast between tradition and modernity.
Rather than simply reproducing a conventional Japanese aesthetic, the design combines different cultural and material elements to create a contemporary interpretation of a historic brand.
An opening was also created in the kitchen so guests can observe the refined movements of the chefs as they prepare chirashi-zushi, hako-zushi, and bo-zushi. The craftsmanship itself becomes part of the spatial experience.
The result is a simple and refined modern Japanese interior that preserves the heritage of Osaka sushi while presenting it in a fresh and contemporary way.
